Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 package active dry yeast
  • 1 cup very warm water
  • 2 egg whites
  • 2 tablespoons vegetable oil

Instructions

  1. Mix 1 1/4 cups of flour, sugar, Parmesan cheese, salt, pepper, and yeast in a large bowl.
  2. Beat in warm water, egg whites, and vegetable oil until smooth.
  3. Stir in the remaining flour until the batter is smooth.
  4. Scrape batter from the sides of the bowl.
  5. Cover and let rise in a warm place for about 30 minutes or until doubled in size.
  6. Spray 12 medium muffin cups, 2 1/2 x 1 1/4 inches, with nonstick cooking spray.
  7. Stir down the batter, beating about 25 strokes.
  8. Divide the batter among the muffin cups.
  9. Let rise, uncovered, for 20 to 30 minutes or until the batter rounds over the tops of the cups.
  10. Preheat oven to 400°F and bake for 15 to 20 minutes or until golden brown.
