Ingredients

  • 3/4 c. fine dry breadcrumbs
  • 2 Tbsp. grated Parmesan cheese
  • 3 Tbsp. fresh parsley, chopped
  • 1/2 clove garlic, crushed
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (2 1/2 to 3 lb.) fryer, cut and skinned
  • 1/2 c. vegetable oil

Instructions

  1. Combine first 6 ingredients in plastic bag.
  2. Shake to mix. Place 2 pieces of chicken in bag.
  3. Shake to coat.
  4. Repeat with remaining chicken.
