Partridge Pie

Ingredients

  • 4 partridge, cooked and diced
  • 1/4 lb. melted oleo
  • 3 chopped onions
  • 6 Tbsp. flour
  • 2 1/2 cups broth
  • double pie crust

Instructions

  1. Boil the partridge in salted water until tender, then allow to cool.
  2. Remove the meat from the bones and dice.
  3. Save the broth from boiling.
  4. Saute chopped onions in melted oleo or butter until translucent.
  5. Add flour to the onions and stir well.
  6. Gradually add the broth and cook until the mixture thickens.
  7. Line a deep pie pan with a double pie crust.
  8. Add the diced meat to the pie shell.
  9. Pour the thickened filling over the meat.
  10. Cover with the top crust and seal the edges.
  11. Bake at 350°F until the crust is golden brown.
