Ingredients

  • 4 lean pork chops (1-inch thick)
  • 4 thin slices onion
  • 1/4 cup uncooked rice
  • 1 (1 lb. 13 oz.) can tomatoes
  • 1/2 to 1 teaspoon salt

Instructions

  1. Season the pork chops well on both sides with salt and pepper.
  2. Brown the chops on both sides in a lightly greased hot skillet.
  3. Place each browned chop in a baking dish.
  4. Top each chop with a slice of onion and a heaping tablespoon of uncooked rice.
  5. Cover each with the can of tomatoes, including the juice.
  6. Add any remaining tomatoes and juice to the pan.
  7. Cover tightly with a lid or foil.
  8. Bake in a 350°F (175°C) oven for 1 1/2 hours or until the pork is tender.
