Ingredients

  • 2 c. very stiff mashed potatoes
  • 2 c. finely chopped cooked ham
  • 1 c. shredded Swiss cheese
  • 1/3 c. mayonnaise
  • 1/4 c. minced onion
  • 1 egg
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 1/2 c. crushed cornflakes

Instructions

  1. Combine the mashed potatoes, chopped cooked ham, shredded Swiss cheese, mayonnaise, minced onion, beaten egg, prepared mustard, salt, and pepper. Chill the mixture.
  2. Shape the chilled mixture into 1-inch balls.
  3. Roll each ball in crushed cornflakes to coat evenly.
  4. Place the coated balls on a greased cookie sheet.
  5. Bake at 350°F for 25 to 30 minutes until golden and heated through.
  6. Serve hot.
