Ingredients

  • 24 vanilla wafers
  • 2 (8 oz.) packages cream cheese, softened
  • 3/4 cup sugar
  • 1 can cherry pie filling
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 2 eggs

Instructions

  1. Place paper liners in 24 muffin tins.
  2. Put 1 vanilla wafer in the bottom of each muffin cup.
  3. Combine cream cheese, sugar, eggs, lemon juice, and vanilla in a mixing bowl.
  4. Beat until smooth and creamy.
  5. Pour enough filling into each muffin liner to fill about 2/3 full.
  6. Bake at 350°F (175°C) for 15 to 20 minutes.
  7. Cool thoroughly or refrigerate overnight.
  8. Just before serving, spoon cherry pie filling on top of each cheesecake.
