Light and airy chocolate chip cloud cookies with a delicate meringue texture, infused with cocoa and mini chocolate chips. Perfect for a sweet, gluten-free treat or special occasion.

Ingredients

  • 3 large egg whites
  • 1/2 tsp cream of tartar
  • 2/3 cup granulated sugar
  • 1/2 tsp vanilla
  • 1/4 cup mini semi-sweet chocolate chips
  • 3 Tbsp unsweetened cocoa

Instructions

  1. Heat oven to 200°F (93°C).
  2. Line a large cookie sheet with butcher's paper.
  3. In a large bowl, whip egg whites and cream of tartar at high speed until foamy.
  4. Beat in sugar, one tablespoon at a time, until stiff and glossy peaks form.
  5. Beat in vanilla.
  6. Gently fold in mini semi-sweet chocolate chips and cocoa until thoroughly combined.
  7. Drop teaspoons of batter onto the prepared cookie sheet, spacing about 1 inch apart.
  8. Bake for 1 hour until the outside of the cookies are dry and set.
  9. Let cool, then peel off the paper.
  10. Store in an airtight container.
