Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 beaten eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 2 cups plain flour
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder

Instructions

  1. Cream the shortening until smooth and fluffy.
  2. Gradually add sugar and continue creaming until mixture is very fluffy.
  3. Add beaten eggs and beat until light and well incorporated.
  4. Sift the flour and measure it accurately.
  5. Add salt and baking powder to the flour and sift twice more.
  6. Mix vanilla into the milk.
  7. Alternately add dry ingredients and vanilla milk to the creamed mixture, starting and ending with dry ingredients.
  8. Beat the mixture thoroughly until smooth and blended.
  9. Pour the batter into cupcake liners and bake at 375°F (190°C) for 25 to 30 minutes.
  10. Allow cupcakes to cool and top with your favorite frosting.
