A refreshing, nutty pineapple salad with crisp celery and green peppers, complemented by creamy cottage cheese and whipped cream, perfect for entertaining or casual gatherings.

Ingredients

  • 1 (No. 2 1/2) can pineapple
  • 1 1/2 Tbsp. plain gelatin
  • 1 1/2 c. celery, diced fine
  • 1 1/2 c. chopped pecans
  • 1 1/2 c. green peppers, finely diced
  • 1/8 tsp. salt
  • 1 pt. cottage cheese
  • 3/4 c. mayonnaise
  • 1 pt. cream

Instructions

  1. Drain the pineapple and cut into small pieces.
  2. Dissolve the plain gelatin in 1/4 cup of pineapple juice.
  3. Bring the remaining pineapple juice to a boil and pour over the gelatin.
  4. Set aside to cool.
  5. Mix the chopped pineapple, chopped pecans, diced celery, finely diced green peppers, and salt with the cottage cheese and mayonnaise.
  6. Add the cooled gelatin mixture to the salad and mix well.
  7. Fold in the whipped cream sweetened with powdered sugar.
  8. Pour the mixture into a ring mold rinsed with cold water.
  9. Chill until the salad is firm.
