Ingredients

  • 8 red potatoes, diced
  • 1 small onion, chopped
  • 3 beef bouillon cubes
  • 1/2 cup chopped celery
  • 1 pound Velveeta cheese
  • 1 (8 oz.) carton sour cream

Instructions

  1. Cook diced potatoes, chopped onion, celery, and beef bouillon cubes in 3 quarts of water until potatoes are tender.
  2. Fry bacon until crispy and cut into small pieces.
  3. Add bacon to the potato and vegetable mixture.
  4. Stir in Velveeta cheese and sour cream.
  5. Cook until cheese and sour cream are melted and the soup is heated through.
  6. Serve hot with bread.
