Ingredients

  • 3/4 cup carrot, shredded
  • 1/4 cup cucumber, seeded and chopped
  • 1/4 cup celery, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup onion, finely chopped
  • 1 (8 ounce) package cream cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. In a bowl, combine carrot, cucumber, celery, green pepper and onion.
  2. Drain on paper towels for 30 minutes.
  3. In a small bowl, combine cream cheese, mayonnaise, lemon juice, salt and pepper.
  4. Stir in vegetables.
  5. Cover and refrigerate at least 2 hours.
