Ingredients

  • 1 can white or Great Northern beans
  • 2 cans water
  • 1/2 onion, chopped
  • 3 stalks celery, chopped
  • 1 to 2 garlic cloves, minced
  • 2 large tomatoes
  • parsley, chopped
  • basil, to taste
  • salt, to taste
  • 1/2 cup oil
  • 1/2 pound salad macaroni
  • grated cheese

Instructions

  1. Saute chopped onion and celery in oil until soft.
  2. Mash the tomatoes and cook the macaroni separately.
  3. Add mashed tomatoes and cooked macaroni to the onion mixture.
  4. Add all remaining ingredients including beans, herbs, and salt.
  5. Simmer the mixture for about 20 minutes.
  6. Serve topped with grated cheese.
