  • 2 1/2 lb baked ham, cubed
  • 8 to 10 oz diced onion
  • 1 to 1 1/2 very large jalapeno peppers
  • 4 Tbsp yellow mustard
  • 10 oz jar Heinz sweet relish
  • mayonnaise

Instructions

  1. In 2 or 3 batches, place onions and jalapenos in a food processor and chop finely.
  2. Add one-third or one-half of the cubed baked ham to the processor and chop fine.
  3. Add one-third or one-half of the mustard, relish, and about one-third to one-half cup of mayonnaise to the processor and blend thoroughly.
  4. Repeat the process with the remaining ingredients in batches.
  5. Mix all batches together and add enough mayonnaise to make the spreadable.

Tips & Substitutions

For a creamier texture, gradually add mayonnaise until you reach your desired consistency. If you prefer a spicier kick, consider adding more jalapeno or even a dash of hot sauce. For a different flavor profile, substitute Dijon mustard for yellow mustard. This ham salad also works well as a filling for sandwiches or wraps. Use leftovers in recipes like Shaker Fish Chowder for a unique twist.

Serving Suggestions

Serve Pat's Ham Salad on a bed of greens or as a filling for sandwiches. It pairs beautifully with Nan's Potato Salad for a delightful lunch or picnic spread. For a light meal, consider adding slices of fresh tomatoes or pickles on the side. It’s also a great appetizer when served with crackers.

Storage & Reheating

Store any leftover ham salad in an airtight container in the refrigerator for up to three days. To reheat, gently warm it in the microwave, but be cautious not to overheat as it may affect the texture. This dish is best enjoyed cold, so consider serving it straight from the fridge.
