Ingredients

  • 2 c. cornmeal
  • 1/2 c. flour
  • 2 c. buttermilk
  • 1 hot pepper
  • 1 large onion
  • 2 eggs
  • 1 can Mexican corn
  • 1/2 c. pork sausage

Instructions

  1. Mix cornmeal, flour, and all other ingredients together in a bowl.
  2. Cut up the onion and hot pepper; add to the mixture along with the sausage, eggs, and buttermilk.
  3. Pour the batter into a well-greased and floured skillet or bread pan.
  4. Bake in a preheated oven at 350°F until golden and cooked through, about 30 minutes.
