Ingredients

  • 1/2 head cabbage
  • 1/2 cup light mayonnaise
  • 1/4 cup red wine vinegar
  • 1/8 cup water
  • 2 teaspoons black pepper
  • 1/8 teaspoon sweetener
  • 1 1/2 cups pecans
  • 2 medium apples
  • 1/2 cup dried cranberries or cherries

Instructions

  1. Chop the cabbage into bite-sized pieces and coarsely chop the pecans.
  2. Chop the apples into small pieces.
  3. In a large bowl, combine the chopped cabbage, apples, dried cranberries or cherries, and pecans.
  4. In a small bowl, mix together light mayonnaise, red wine vinegar, water, black pepper, and sweetener to make the dressing.
  5. Pour the dressing over the chopped salad ingredients.
  6. Mix well to combine all flavors.
  7. Chill the salad for 30 minutes before serving.
