  • 4 oz. diced black olives, drained
  • 1 c. grated Cheddar cheese
  • 1/2 c. chopped green onions

Instructions

  1. Blend all ingredients in any order with a hand mixer until thoroughly mixed.
  2. Spread evenly onto 6 burrito size flour tortillas.
  3. Roll each spread tortilla fairly tightly and wrap snugly in plastic wrap.
  4. Refrigerate at least 2 hours.
  5. Unwrap and slice into 1/2-inch pinwheels.
  6. Arrange on a serving plate flat. Serve with salsa for dipping.

Tips & Substitutions

For an extra flavor kick, consider adding a pinch of cumin or a dash of hot sauce to the mixture. If you prefer a lighter option, substitute low-fat cream cheese and sour cream. You can also use whole wheat tortillas for a healthier twist. Make sure to drain the green chilies and olives thoroughly to avoid excess moisture in the roll-ups.

Serving Suggestions

These roll-ups make a fantastic party appetizer or snack. Serve them alongside salsa for dipping, or pair with guacamole for a creamy contrast. They also go well with a fresh garden salad or a side of Cheesy Corn Dip(Low-Fat) for a complete gathering spread. For a festive touch, garnish with additional chopped green onions.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator. They will keep well for up to 3 days. For best results, enjoy them cold right out of the fridge. If you prefer them warm, briefly microwave individual slices for about 15-20 seconds, but be cautious not to overheat.

Frequently Asked Questions

Can I make these roll-ups ahead of time?

Absolutely! You can prepare them up to a day in advance. Just be sure to wrap them tightly in plastic wrap and refrigerate. This allows the flavors to meld beautifully, making them even tastier when served.

What can I substitute for green chilies?

If you’re not a fan of green chilies, try using diced jalapeños for a spicier kick or finely chopped bell peppers for a milder flavor. You can also omit them entirely if you prefer a simpler taste.

Can I freeze the roll-ups?

While it’s possible to freeze the roll-ups, it’s best to consume them fresh for optimal taste and texture. If you do freeze them, wrap each roll tightly in plastic wrap and store in a sealed container. Thaw in the refrigerator before slicing and serving.
