Ingredients

  • 3/4 cup vinegar
  • 1 tablespoon water
  • 1/4 to 1/2 teaspoon pepper
  • 3/4 cup sugar
  • 1 teaspoon salt
  • some oil
  • 17 oz. can sweet peas
  • 2 oz. pimento
  • 1 cup onion
  • 12 oz. can shoepeg corn
  • 1 cup celery

Instructions

  1. Combine vinegar, water, pepper, sugar, salt, and oil (if desired) in a saucepan.
  2. Bring the mixture to a boil and cook for 1 minute.
  3. Allow the mixture to cool.
  4. Drain the sweet peas and shoepeg corn.
  5. Chop the onion, celery, and pimentos.
  6. In a large bowl, combine the drained sweet peas, shoepeg corn, chopped onion, celery, and pimentos.
  7. Pour the cooled vinegar mixture over the ingredients and mix well.
  8. Cover and chill in the refrigerator overnight before serving.
