Peach-Butterscotch Pie

Ingredients

  • 1 large can peaches
  • 1 recipe plain pastry
  • 1/2 c. brown sugar
  • 2 Tbsp. all-purpose flour
  • dash of salt
  • 1/4 c. syrup from canned peaches
  • 1/4 c. butter or margarine
  • 2 tsp. lemon juice (fresh, frozen or canned)

Instructions

  1. Place peaches in 9-inch pastry-lined pie pan.
  2. Combine sugar, flour, salt and peach syrup.
  3. Add butter and cook until thick. Remove from heat and add lemon juice; pour over peaches.
  4. Make lattice top crust.
  5. Bake at 425° for 30 minutes.
