Ingredients

  • 1 envelope unflavored gelatin
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 1 tablespoon flour
  • 1 (No. 2 1/2) can sliced peaches
  • 1 1/2 cups peach syrup
  • 3 tablespoons lemon juice
  • 1/2 teaspoon lemon rind
  • 1 cup canned milk
  • 1 (10-inch) pie shell

Instructions

  1. Combine gelatin, sugar, salt, and flour in a saucepan.
  2. Drain the sliced peaches.
  3. Add water to the peach syrup if necessary to make 1 1/2 cups.
  4. Add the syrup to the gelatin mixture.
  5. Cook, stirring constantly, until the mixture thickens.
  6. Remove from heat.
  7. Add lemon juice and lemon rind; chill until the mixture is the consistency of unbeaten egg whites.
  8. Beat with an electric beater until fluffy.
  9. Whip the canned milk until frothy.
  10. Fold the whipped milk into the gelatin mixture.
  11. Gently fold in the drained peaches.
  12. Reserve a few peach slices for garnish.
  13. Pour the custard into the pie shell.
  14. Arrange the reserved peach slices on top of the pie.
