  1. Cut each egg crosswise into slices.
  2. Scoop yolks into a small bowl and mash well.
  3. Set egg whites aside.
  4. Stir mayonnaise, pimientos, scallions, mustard, and garlic into the yolks until smooth and well blended.
  5. Top each wheat 'n bran Triscuit wafer with an egg white slice.
  6. Spoon or pipe the yolk mixture onto the egg whites.
  7. Garnish with parsley and tomato, if desired.
