Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 4 teaspoons baking powder
  • 4 cups flour

Instructions

  1. Beat eggs, sugar, and oil until well combined.
  2. Add flour and baking powder to the mixture and mix thoroughly.
  3. Form the dough into 1-inch balls without pressing them down.
  4. Place the balls on greased and floured cookie sheets and bake at 350°F for 12 to 15 minutes.
  5. While still warm, hollow out the center of each cookie to create a cavity.
  6. Allow cookies to cool completely.
  7. Fill the hollowed cookies with apricot filling.
  8. Mix half a pint of white vermouth with 6 drops of red food coloring.
  9. Roll the cookies in the vermouth mixture, then in white sugar.
  10. Decorate with peach leaves before serving.
