Ingredients

  • 1/2 stick margarine
  • 2 cups acorn squash
  • 1 cup sugar
  • 1/2 cup flour
  • 2 eggs
  • Pinch of salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Cinnamon

Instructions

  1. Preheat oven to 450°F.
  2. Melt margarine in an 8 x 8-inch baking dish.
  3. Parboil acorn squash in a small amount of water until tender.
  4. Scoop out the pulp from the squash and place it in a bowl.
  5. Add sugar, flour, beaten eggs, salt, milk, and vanilla extract to the bowl with the squash pulp.
  6. Mix all ingredients well until smooth.
  7. Pour the mixture into the prepared baking dish with melted margarine.
  8. Sprinkle cinnamon on top of the mixture.
  9. Bake for 20 to 30 minutes until set and golden.
