Ingredients

  • 3 cups sliced fresh peaches
  • 2 cups water
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 1 cup pancake mix
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk
  • 2 tablespoons melted butter

Instructions

  1. Combine peaches, water, sugar, and lemon juice in a 3-quart saucepan.
  2. Bring to a boil.
  3. In a separate bowl, combine pancake mix, brown sugar, nutmeg, milk, and melted butter, then stir lightly.
  4. Drop batter by tablespoonfuls into the boiling peach mixture.
  5. Reduce heat, cover the pan, and cook for 15 minutes without lifting the cover.
  6. Serve warm with ice cream.
