Ingredients

  • 6 oz. jar baby food peaches
  • 1 tsp. baking soda
  • 10 Tbsp. butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 1/4 cups flour
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease muffin tins for 12 muffins.
  3. Stir baking soda into peaches; they will foam up.
  4. Cream butter and sugar together until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Alternately add flour and peaches to the mixture.
  7. Mix in salt and vanilla until just combined.
  8. Fill each muffin cup nearly to the top.
  9. Bake for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
