Ingredients

  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 can pineapple slices, drained
  • maraschino cherries
  • 1 box yellow cake mix

Instructions

  1. Combine melted margarine and brown sugar and spread over the bottom of a well-greased cooker.
  2. Arrange pineapple slices on top of the sugar mixture and place maraschino cherries in the center of each slice.
  3. Prepare the yellow cake mix according to package instructions, using pineapple juice for part of the liquid.
  4. Pour the prepared cake batter over the fruit in the cooker.
  5. Cover the cooker with two tea towels and its lid to prevent condensation from dripping onto the cake.
  6. Cook on high for 1 hour, then on low for 3 to 4 hours.
  7. Allow the cake to cool for 10 minutes after cooking.
  8. Run a knife around the edge of the cake and invert it onto a large platter to serve.
