Peach Or Pineapple Upside-Down Cake

- Combine melted margarine and brown sugar and spread over the bottom of a well-greased cooker.
- Arrange pineapple slices on top of the sugar mixture and place maraschino cherries in the center of each slice.
- Prepare the yellow cake mix according to package instructions, using pineapple juice for part of the liquid.
- Pour the prepared cake batter over the fruit in the cooker.
- Cover the cooker with two tea towels and its lid to prevent condensation from dripping onto the cake.
- Cook on high for 1 hour, then on low for 3 to 4 hours.
- Allow the cake to cool for 10 minutes after cooking.
- Run a knife around the edge of the cake and invert it onto a large platter to serve.
