A refreshing and fruity salad featuring pineapple, mandarin oranges, bananas, and a sweet tapioca pudding dressing, perfect for casual gatherings or summer parties.

Ingredients

  • 1 large can chunk pineapple, drained
  • 2 small cans mandarin oranges, drained
  • orange juice to make 3 cups total
  • 2 packages tapioca pudding (cooking kind only)
  • 4 bananas, sliced
  • 1 jar maraschino cherries (optional)

Instructions

  1. Add enough orange juice to the reserved juice to make 3 cups of liquid.
  2. Add the juices to the two packages of tapioca pudding mix.
  3. Bring the mixture to a boil and cook until thickened.
  4. Remove from heat and let cool.
  5. When cool, pour the tapioca mixture over the drained pineapple, mandarin oranges, and sliced bananas.
  6. Refrigerate the salad and chill for several hours before serving.
