Ingredients

  • 1 (3 oz.) package apricot or peach Jell-O
  • 1 Keebler graham cracker pie crust
  • 2/3 cup boiling water
  • 1 cup vanilla ice cream
  • 1 cup diced fresh peaches

Instructions

  1. Dissolve the gelatin in boiling water and stir well.
  2. Add the vanilla ice cream by spoonfuls and stir until melted and smooth.
  3. Blend in Cool Whip and diced fresh peaches.
  4. Chill the mixture if necessary until it will mound.
  5. Spoon the mixture into the graham cracker pie crust.
  6. Chill for about 3 hours until firm.
