Peachy Oatmeal Bars

Ingredients

  • 3/4 c. butter or margarine
  • 1 1/4 c. rolled oats
  • 1 1/4 c. flour
  • 1/2 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 c. peach preserves
  • 1 c. coconut

Instructions

  1. Melt margarine in a 13 x 9-inch pan while preheating oven. Stir in rolled oats, flour, sugar and baking powder until blended. Mixture will be crumbly; reserve 1/2 cup crumbs.
  2. Pat remaining mixture in bottom of pan.
  3. Spread preserves to within 1/2-inch of edges.
  4. Sprinkle on coconut and remaining crumbs.
  5. Bake at 350° for 25 minutes or until lightly browned.
  6. Cool in pan.
