Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup margarine, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • granulated sugar

Instructions

  1. In a small bowl, combine flour, baking soda, and salt.
  2. In a large bowl, beat margarine and peanut butter until well blended.
  3. Beat in granulated sugar and brown sugar until blended.
  4. Beat in egg and vanilla.
  5. Gradually beat in the flour mixture until well mixed.
  6. Shape dough into 1-inch balls.
  7. Roll the balls in granulated sugar.
  8. Place on ungreased cookie sheets, 2 inches apart.
  9. Bake in preheated 375°F oven for 10 minutes or until lightly browned.
  10. Remove from oven and quickly press a star-shaped cookie cutter into the top of each cookie (cookies will crack around edges).
  11. Remove to wire racks to cool completely.
