Peanut Crunch Pie

Ingredients

  • 6 oz. peanut brittle, chopped
  • 5 c. (2 1/2 pt.) vanilla ice cream, slightly softened
  • 1 butter flavored crust
  • 2/3 c. chocolate chips or 1 (3 oz.) milk chocolate bar
  • 1/2 c. heavy whipping cream
  • 1/4 c. powdered sugar
  • 1/4 c. smooth peanut butter

Instructions

  1. Reserve some chopped peanut brittle for decoration.
  2. Mix remaining brittle with the ice cream in large bowl.
  3. Spoon into crust mounding it in center.
  4. Smooth with metal spatula; cover with foil and freeze at least 6 hours or overnight.
  5. Stir chocolate chips and heavy cream in bowl and microwave on Low until chocolate melts and mix is smooth.
  6. Stir in powdered sugar and peanut butter until blended.
  7. Put pie on waxed paper to catch drips.
  8. Pour chocolate mix over pie, spreading it quickly with a thin metal spatula.
  9. Freeze 1 hour or until topping is firm.
  10. Just before serving, top with remaining brittle.
