Ingredients

  • 1 gal. pears
  • 6 c. sugar
  • 2 c. water
  • 4 c. vinegar
  • 2 pieces ginger root
  • 2 sticks cinnamon
  • 2 Tbsp. whole allspice
  • 2 Tbsp. cloves

Instructions

  1. Boil the pears in clear water for 20 to 30 minutes.
  2. Meanwhile, boil the sugar, water, vinegar, ginger root, cinnamon sticks, allspice, and cloves in a bag to make the syrup.
  3. Drain the pears and place them in the vinegar mixture.
  4. Cook until the pears are tender.
  5. Pack the hot pears into sterilized jars.
  6. Process the jars in a hot water bath for 5 minutes.
  7. Seal the jars and let them cool.
  8. Store the jars in a dark place.
