Ingredients

  • 4 Tbsp. unsalted butter
  • 1 large sweet onion, diced
  • 2 large cloves garlic, chopped
  • 1 tsp. dried oregano
  • 1/2 lb. smoked beef sausage, cut into 3/4 inch slices
  • 6 medium potatoes, cut into 1-1/2 to 2 inch pieces
  • Salt and pepper to taste
  • 2 c. sliced Savoy or other cabbage
  • 1 c. diced or sliced roasted red bell peppers
  • 1/2 c. shaved fresh Parmesan cheese

Instructions

  1. In a large skillet over medium heat, melt the butter.
  2. Add the diced onion and chopped garlic; cook and stir for 5 minutes or until the onion is transparent.
  3. Stir in the dried oregano and smoked beef sausage slices; cook for about 5 minutes more.
  4. Add the potatoes, salt, and pepper; stir until the potatoes are well coated with butter and seasonings.
  5. Transfer the mixture to a slow cooker.
  6. Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours, stirring every hour if possible.
  7. During the last 30 minutes of cooking, add the sliced cabbage and roasted red bell peppers.
  8. Sprinkle with shaved fresh Parmesan cheese before serving.
