Ingredients

  • 6 (4 oz.) catfish fillets
  • 1 cup fresh whole wheat bread crumbs
  • cooking spray
  • 1/4 cup fat-free sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 3 tablespoons chopped pecans, toasted

Instructions

  1. Preheat oven to 500°F.
  2. Dredge each catfish fillet in fresh whole wheat bread crumbs.
  3. Place the breaded fillets on a broiler pan coated with cooking spray.
  4. Bake at 500°F for 10 minutes or until the fish flakes easily with a fork.
  5. Arrange the cooked fillets on a serving dish and keep warm.
