  2. Reduce the reserved liquid to 1 cup by boiling, then strain and set aside.
  3. Cook mushrooms and green onions in 3 tablespoons of butter for approximately 5 to 6 minutes, then remove from pan.
  4. Melt 3 tablespoons of butter in a separate pan.
  5. Stir in flour and cook over low heat until smooth and bubbly.
  6. Gradually stir in the reserved liquid and half and half, then add the scallops, cooked mushrooms and onions, and 1/4 cup of Swiss cheese. Heat until hot.
  7. Prepare bread crumbs by tossing them in melted butter.
  8. Grease baking dishes and divide the scallop mixture among them.
  9. Sprinkle with remaining cheese and top with buttered bread crumbs.
  10. Broil 3 to 5 inches from the heat source for 3 to 5 minutes until golden and bubbly.
