- Dissolve gelatin in water.
- Mix egg yolks, milk, sugar, and salt and cook in the top of a double boiler until it coats the spoon but not longer.
- Add dissolved gelatin to the custard and cool.
- Beat egg whites until stiff and gradually add sugar.
- Fold the custard into the beaten egg whites.
- Add vanilla extract.
- Fold in the finely chopped pecans, saving a few for sprinkling on top.
- Pour the mixture into a cooked, cooled pie shell.
- Refrigerate until set.
