Pecan Chiffon Pie

A light, fluffy pecan chiffon pie with a delicate texture, sweet vanilla flavor, and crunchy pecan topping, perfect for special occasions or everyday desserts.

Ingredients

  • 1 pkg. plain gelatin
  • 2 Tbsp. water
  • 4 egg yolks
  • 3/4 c. milk
  • 1/2 c. sugar
  • pinch of salt
  • 4 egg whites
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. pecans, very finely chopped

Instructions

  1. Dissolve gelatin in water.
  2. Mix egg yolks, milk, sugar, and salt and cook in the top of a double boiler until it coats the spoon but not longer.
  3. Add dissolved gelatin to the custard and cool.
  4. Beat egg whites until stiff and gradually add sugar.
  5. Fold the custard into the beaten egg whites.
  6. Add vanilla extract.
  7. Fold in the finely chopped pecans, saving a few for sprinkling on top.
  8. Pour the mixture into a cooked, cooled pie shell.
  9. Refrigerate until set.
