Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1 pound pecans
  • 1 pound chopped dates
  • 1 cup candied fruit, chopped (cherries or pineapple or both)
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Instructions

  1. Sift flour and sugar together.
  2. Mix pecans, chopped dates, and candied fruit.
  3. Beat eggs, vanilla, and salt until well combined.
  4. Add the flour mixture to the egg mixture and blend.
  5. Pour the batter over the fruit and nut mixture and work with hands until thoroughly blended.
  6. Line a loaf pan with wax paper and pour the batter into it.
  7. Bake at 275°F (135°C) for 2 1/2 hours.
  8. Remove the wax paper immediately after baking.
