Ingredients

  • 2 cups granulated sugar
  • 1 cup cream
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons grated bitter chocolate
  • 2 tablespoons butter
  • pinch of salt
  • 1 cup whole pecan meats

Instructions

  1. Boil the sugar, cream, cream of tartar, grated bitter chocolate, butter, and salt to the soft ball stage (242°F).
  2. Set the mixture aside until cold, then beat until creamy.
  3. Add the whole pecan meats to the mixture and pour into a pan.
  4. Allow the fudge to cool completely, then cut into squares.
