Ingredients

  • 8 sweet potatoes
  • 2 oranges
  • 2 Tbsp. cornstarch
  • 1 c. brown sugar
  • 1/2 tsp. salt
  • 2 Tbsp. grated orange rind
  • 1/4 c. butter
  • 2 c. orange juice
  • 1/2 c. pecan halves

Instructions

  1. Cut the cooked sweet potatoes crosswise into 1/2-inch slices.
  2. Arrange layers of sweet potato slices and orange slices in a casserole dish alternately.
  3. Combine cornstarch, brown sugar, and salt in a bowl.
  4. Add grated orange rind and butter to the mixture.
  5. Pour orange juice into the casserole and cook until the mixture thickens.
  6. Pour the sauce over the layered potatoes and orange slices.
  7. Top with pecan halves.
  8. Bake at 325°F (160°C) for 30 minutes or until heated through.
