Ingredients

  • 1 bag vanilla wafers
  • 1 1/2 cups chopped pecans
  • 3 egg yolks
  • 1 cup sugar
  • 2 cups milk or boiling water
  • 3 heaping tablespoons flour
  • 1 teaspoon vanilla
  • small piece margarine

Instructions

  1. Mix sugar and flour together in a saucepan.
  2. Add milk or boiling water and egg yolks, then stir well.
  3. Spray a saucepan with Pam, pour in the mixture, and cook over medium heat, stirring constantly, until thickened.
  4. Remove from heat and add margarine and vanilla, stirring until margarine is melted.
  5. In an oblong dish, layer vanilla wafers, then a layer of pudding, followed by chopped pecans.
  6. Repeat the layers once more: wafers, pudding, pecans.
  7. In a medium bowl, pour egg whites and add 1/4 teaspoon baking soda.
  8. Beat until fluffy and peaks form.
  9. Gradually add 6 tablespoons of sugar and beat until well combined.
  10. Spread the meringue over the layered pudding.
  11. Bake in the oven until the meringue is browned.
