Ingredients

  • 3 egg whites
  • 1 tsp baking powder
  • 3/4 cup chopped pecans
  • 1/2 tsp vanilla
  • 1 cup sugar
  • 1 cup cracker crumbs (saltines or Hi Ho)

Instructions

  1. Beat egg whites until stiff; add sugar, baking powder, and vanilla.
  2. Beat and mix well.
  3. Fold in chopped pecans and cracker crumbs.
  4. Pour mixture into a well-greased 9-inch pie pan.
  5. Bake at 350°F (175°C) for 30 minutes.
  6. Let cool for 2 hours.
  7. Top with whipped cream and additional pecans before serving.
