Ingredients

  • 2 Tbsp. olive oil
  • 4 slices pancetta or prosciutto
  • 2 garlic cloves, minced
  • 1 (35 oz.) can Italian peeled plum tomatoes with juice
  • salt to taste
  • 1 shake dried red pepper flakes
  • 1 lb. penne
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Brown pancetta and garlic in olive oil over medium heat in a large frying pan for 7 minutes.
  2. Add tomatoes with liquid, salt, and red pepper flakes; boil, breaking up tomatoes, for 30 minutes or until thick, stirring frequently.
  3. Cook penne in a large pot of boiling water until al dente.
  4. Drain the pasta.
  5. Return the drained pasta to the pot.
  6. Add the sauce to the pasta and mix to coat.
  7. Stir in grated Parmesan cheese and mix well.
  8. Serve hot and enjoy.
