Ingredients

  • 1/3 cup oil
  • 1 tablespoon butter
  • 3 cloves garlic
  • 1 (32 oz) can Italian style plum tomatoes
  • 6 ounces button mushrooms
  • 1 sprig fresh rosemary
  • 5 or 6 basil leaves
  • 1 cup shelled peas
  • pinch cayenne pepper
  • salt
  • fresh ground pepper
  • 1 pound dried penne
  • 1/3 cup whipping cream

Instructions

  1. Heat olive oil and butter in a skillet with halved garlic cloves.
  2. Cook until garlic is golden, then remove and discard the garlic pieces.
  3. Add drained Italian plum tomatoes to the skillet and simmer for 4 minutes.
  4. Add quartered mushrooms and cook for 5 minutes.
  5. Stir in minced rosemary, chopped basil, shelled peas, cayenne pepper, salt, and pepper; cook until peas are tender.
  6. Meanwhile, bring a large pot of water to a boil.
  7. Cook the dried penne pasta until al dente according to package instructions.
  8. While pasta cooks, stir the whipping cream into the sauce and heat through.
  9. Drain the cooked pasta and pour the hot sauce over it.
  10. Add half of the grated Parmesan cheese and toss to combine.
  11. Serve with the remaining Parmesan cheese at the table.
