Ingredients

  • 1/2 medium onion, finely chopped
  • 2 Tbsp. butter
  • 3 Tbsp. vegetable oil
  • 1/2 lb. bacon, cubed
  • 1 1/2 cups canned Italian tomatoes
  • 1/2 to 1 small dried red hot pepper, chopped fine
  • salt to taste (about 1 1/2 tsp.)
  • 1 lb. penne
  • 3 Tbsp. fresh grated Parmesan cheese
  • 1 Tbsp. fresh grated Romano cheese

Instructions

  1. Cook bacon until soft, then set aside.
  2. Sauté onions until pale gold, then combine with cooked bacon.
  3. Sauté for 1 minute using bacon grease.
  4. Add canned Italian tomatoes, chopped red hot pepper, and salt to the onion and bacon mixture.
  5. Set aside the tomato mixture.
  6. Cook penne pasta according to package instructions until al dente.
  7. Drain the pasta and toss with the bacon, onion, and tomato mixture.
  8. Serve hot, sprinkled with grated Parmesan and Romano cheeses.
