A hearty vegetable soup featuring mixed vegetables, potatoes, green beans, and lean ground beef, flavored with herbs and tomato juice for a comforting, family-friendly meal.

Ingredients

  • 20 oz. bag frozen mixed vegetables
  • 2 c. chopped, peeled potatoes
  • 1 medium onion, grated
  • 1 pt. green beans
  • 1 lb. extra lean ground beef
  • 1/2 gal. tomato juice
  • 1 Tbsp. salt
  • 1/3 c. sugar
  • 1/2 tsp. garlic
  • 1 tsp. basil flakes
  • 1 tsp. parsley flakes

Instructions

  1. In a large pot with a little water, simmer the mixed vegetables and grated onion.
  2. While vegetables are cooking, drop small ground beef balls into boiling water in a separate pot.
  3. When vegetables are tender, drain the meat balls and add them to the mixed vegetables.
  4. Add the tomato juice, salt, sugar, garlic, basil flakes, and parsley flakes.
  5. Simmer the mixture together for 45 minutes to blend flavors.
