Ingredients

  • 2 1/2 cups firmly packed brown sugar
  • 3/4 cup milk or whipping cream
  • 1 tablespoon butter
  • 1 tablespoon light corn syrup
  • pinch of salt
  • 1/3 cup chopped nuts
  • 1 teaspoon vanilla

Instructions

  1. Blend together brown sugar, milk or cream, butter, corn syrup, and salt in a 3-quart casserole dish.
  2. Microwave on High for 5 minutes, or until sugar is dissolved.
  3. Stir well.
  4. Microwave 12 to 15 minutes on High or until a small amount dropped in very cold water forms a soft ball.
  5. Cool to lukewarm.
  6. Using a wooden spoon, beat vigorously until mixture begins to thicken.
  7. Stir in vanilla and chopped nuts.
  8. Continue beating until candy is thick and difficult to work.
  9. Spread evenly in a buttered 8 x 8-inch pan.
  10. Cool until firm.
  11. Cut into squares.
