Creamy, cheesy Pepper Jack potatoes with a spicy kick, perfect as a hearty side dish for family dinners or gatherings that enjoy bold flavors.

Ingredients

  • 6 medium potatoes, peeled and sliced into 1/4 inch pieces
  • 1 medium onion, sliced
  • 1/3 cup butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon black pepper

Instructions

  1. In a large bowl, combine the sliced potatoes and onions.
  2. Mix the melted butter with salt, chili powder, cayenne pepper, and pepper; drizzle over the potatoes and onions. Toss to coat evenly.
  3. Place half of the coated potatoes and onions in a greased 13 x 9 x 2 inch baking dish.
  4. Sprinkle with half of the shredded cheese.
  5. Top with the remaining potatoes and onions, then sprinkle with the remaining cheese.
  6. Bake in a preheated oven at 375°F (190°C) for approximately 45 minutes until golden and bubbly.
