Ingredients

  • 24 red peppers
  • 24 green peppers
  • 8 large onions
  • 2 qt vinegar
  • 1/4 cup salt
  • 2 1/4 cups sugar

Instructions

  1. Remove the stems and seeds from the red and green peppers. Chop vegetables in the grinder, using a large blade.
  2. Pour boiling water over vegetables to cover. Let stand for 5 minutes.
  3. Drain. Again pour boiling water over the vegetables and allow to stand for 10 minutes.
  4. Drain for 1 hour.
  5. Add the vinegar, salt, and sugar and cook for 1 hour.
  6. Then put into hot jars, not cold ones.
