Ingredients

  • 4 cups cooked rice
  • 1 small carton sour cream
  • 1 can sliced water chestnuts
  • 1 jalapeno pepper, diced
  • 1/2 cup grated Monterey Jack cheese
  • chicken broth
  • 2/3 cup creamy Italian dressing
  • 1 tablespoon jalapeno pepper juice

Instructions

  1. Cook rice according to package instructions, substituting chicken broth for water.
  2. Stir in sour cream, creamy Italian dressing, water chestnuts, diced jalapeno pepper, and jalapeno pepper juice.
  3. Pour the mixture into a greased 9 x 13-inch casserole dish.
  4. Top with grated Monterey Jack cheese.
  5. Bake in a 350°F oven for 20 minutes until hot and bubbly.
