Ingredients

  • 4 lb. chuck roast bone-in
  • 1 cup water
  • 2 tsp. salt
  • 1.5 Tbsp. pepper

Instructions

  1. Trim all fat and membrane from the meat.
  2. Cut the meat into 1-inch cubes.
  3. Place all ingredients in a covered Dutch oven.
  4. Bake at 300°F for 4 to 5 hours.
  5. Check after 3.5 hours; if too dry, add water.
  6. After 4.5 to 5 hours, use a potato masher to mash the meat.
  7. The meat should look like a spread.
  8. Serve warm on bread, especially on party rye.
