Ingredients

  • 4 or 5 chicken breasts, cooked and chopped
  • 1 small can LeSueur peas
  • 2 Tbsp chopped onions
  • 1 can celery soup
  • 1/2 cup evaporated milk
  • 1 stick margarine
  • 2 cups stuffing mix

Instructions

  1. Combine the cooked, chopped chicken, peas, chopped onions, celery soup, and evaporated milk in a mixing bowl.
  2. Bring 1 stick of margarine and 2 cups of stuffing mix to a boil in a saucepan.
  3. Pour the melted margarine into a baking dish and stir in the stuffing mix until well coated.
  4. Remove 2/3 cup of the stuffing mixture and set aside for topping.
  5. Pour the chicken mixture into the baking dish over the stuffing.
  6. Spread the remaining stuffing mixture on top of the chicken mixture.
  7. Bake at 425°F (220°C) for 10 minutes until heated through and bubbly.
